Here’s an easy focaccia you can mostly knead in your food mixer (with a dough hook). I like to fill it with herbs and cheese or vegetables and cheese to make half of a meal with soup or salad. This focaccia was stuffed on one half with brie, rosemary, garlic, anchovies and sundried tomatoes, folded and baked for 15 minutes.
What you need:
- quick-rise yeast, 1 packet
- hand-warm water, 1/3 cup
- sugar, 1/4 tsp
- unbleached plain flour, 1 3/4 cups
- salt, 1/2 tsp
- egg, 1
- olive oil, 1/4 cup
- Preheat the oven to 400F
- Mix the yeast, water and sugar in a bowl. Leave in a warm place, covered, for 5 minutes
- Whisk together the egg, olive oil, salt, and add yeast mixture to this
- Pour all into the bowl of your mixer, add the flour slowly while the dough hook turns at a slow speed
- Have the dough hook knead the dough for 5 minutes, till it’s silky and comes together
- Turn it out onto a clean surface, knead for a minute and form into a ball
- Leave the dough in a bowl, in a warm spot for 30 minutes
- Punch the air out of the dough
- Roll it out into whatever shape you like
- Add toppings and leave it to rise 20 minutes.
- Bake for 15 minutes
