Here’s an easy focaccia you can mostly knead in your food mixer (with a dough hook). I like to fill it with herbs and cheese or vegetables and cheese to make half of a meal with soup or salad. This focaccia was stuffed on one half with brie, rosemary, garlic, anchovies and sundried tomatoes, folded and baked for 15 minutes.

What you need:

  • quick-rise yeast, 1 packet
  • hand-warm water, 1/3 cup
  • sugar, 1/4 tsp
  • unbleached plain flour, 1 3/4 cups
  • salt, 1/2 tsp
  • egg, 1
  • olive oil, 1/4 cup
  1. Preheat the oven to 400F
  2. Mix the yeast, water and sugar in a bowl. Leave in a warm place, covered, for 5 minutes
  3. Whisk together the egg, olive oil, salt, and add yeast mixture to this
  4. Pour all into the bowl of your mixer, add the flour slowly while the dough hook turns at a slow speed
  5. Have the dough hook knead the dough for 5 minutes, till it’s silky and comes together
  6. Turn it out onto a clean surface, knead for a minute and form into a ball
  7. Leave the dough in a bowl, in a warm spot for 30 minutes
  8. Punch the air out of the dough
  9. Roll it out into whatever shape you like
  10. Add toppings and leave it to rise 20 minutes.
  11. Bake for 15 minutes
